Pumpkin Spice Bars (John’s recipe)
Organic is awesome!!
4 eggs
1 cup sugar
1 cup brown sugar
1 cup vegetable oil (olive oil works great!)
15 ounces of Pumpkin (1 can)

2 cups flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp baking soda
3/4 tsp salt
1/2 tsp ground ginger

Heat oven to 350 degrees. Beat eggs, sugar, oil, and pumpkin. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger. Pour batter into greased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Bake until light brown, 25 to 30 minutes. Cool : frost with cream cheese frosting.
Cream Cheese Frosting
Mix
1 package (3 ounces) softened cream cheese
1/4 cup plus 2 tablespoons softened margarine (or butter)
1 tsp vanilla
Gradually beat in
2 cups powdered sugar
1/4 tsp pumpkin pie spice
Beat until smooth and spreading consistency
